The traditional Canarian dish of potatoes with mojo sauce. We will use small potatoes we can get, but ideally will use varieties of nice Canary potatoes or black pope. It is accompanied with mojos typical.

Ingredients
• 1 kilo small potato (see comments)
• 250 g. Coarse salt
• Water
• Mojo
Preparation
First, we will wash the potatoes, making sure that they will all land. The skin should be kept, so do not peel them.
We put the potatoes in a pot and cover with water right up potatoes. Add salt to water. And stir.
Boil potatoes wrinkled our future. The time depends on the size of them, but about 15 mins. Prick a potato with a knife to see if they are ready.
So we strain the potatoes and put them back in the pan on the fire. Then we will move every bit to prevent burning, until the heat and dry the skin of potatoes and acquire its characteristic appearance.
Serve potatoes accompanied by spicy sauce and if you also want to green mojo de cilantro.

The perfect potato varieties would canary pretty black potato or potatoes, which are often difficult to find anywhere else, so look for a variety of small potatoes and of uniform size.
It is desirable that the potatoes are of equal size so that the cooking time is the same for all. We can help to wash a toothbrush to remove dirt.
They are eaten with the skin, but some people like to peel them and go soak in water in red Mojo.
