Vegan pumpkin muffins

New vegan pumpkin muffins recipe. With a simple recipe and bake 20 min we can make these delicious pumpkin muffins.

Difficulty: Easy

Preparation: 35 min.

Ingredients for 12 muffins

• 3/4 cups wheat flour (200 g.)
• 1/4 cups sugar (280 g.)
• 1 tablespoon yeast
• 1/4 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/2 teaspoon nutmeg
• 1/2 teaspoon ground ginger
• 1/8 teaspoon ground cloves
• 1 cup chopped raw pumpkin
• 1/2 cup soy milk (120 ml.)
• 1/2 cup oil (120 ml.)
• 2 tablespoons molasses


Preparation

Preheat oven to 200 degrees C. We cover the inside of the molds cupcakes with a thin layer of margarine. The recipe is designed for 12 muffins.

First, we mix the dry ingredients in our recipe flour, sugar, baking powder, a pinch of salt and spices. Mix well. In another bowl we will beat the pumpkin, milk, soybean oil and molasses. Now both containers together and mix well until smooth texture.


Fill the molds 23 full. Bake for 18 to 20 minutes, until the muffins to stick with a knife comes out clean.

You can try to make muffins pumpkin with coconut milk instead of soy. In general, it is easy to vary the spices and achieve different nuances of flavor.
