Vegan cupcakes

Vegan recipe for homemade muffins. Ideal for breakfast or snacks.

Difficulty: Easy

Preparation: 35 min.

Ingredients for 15 muffins

• 250 g. whole wheat flour
• 125 g. brown sugar
• 250 g. Vegetable margarine
• 1 about half of baking powder
• 4 tablespoons of chickpea flour dissolved in water
• 2 tablespoons ground cinnamon
• 2 tablespoons ground almonds
• 1 tablespoon vanilla sugar
• Juice and zest of one lemon
• 1 pinch of salt


Preparation


Mix the whole wheat flour, sugar, cinnamon, vanilla, salt and yeast in a large bowl.

In a cup, dissolve the chickpea flour in some water (half a cup approx.).

Heat a little margarine and add to the bowl along with the dissolved flour, zest and lemon juice. Mix well.

Fill the molds with the mixture Cupcakes halfway.

Preheat the oven and put the muffins. Bake at 200 degrees C for about 20 minutes.


Comments Recipe


If we want the delicious taste of chocolate, we can add to the mixture about 4 tablespoons of pure cocoa powder, and even chocolate chips.
