Green canary mojo cilantro

Recipe green sauce of cilantro. Tasty mojos canaries are very easy to prepare. This is one of the best known and many variants exist. It can be prepared with parsley or cilantro instead of mixing both herbs, among other options.

Ingredients 1 cup

• 1 head of garlic (8-10 teeth)
• 1 bunch cilantro
• 1 teaspoon ground cumin
• 2 tablespoons vinegar
• 15 tablespoons olive oil
• 1 teaspoon coarse salt

Preparation

As with mojo rojo picón we propose two options for preparing the green sauce. The easiest is to beat all ingredients in a blender or food processor by adjusting the texture with some water. But it's nice to do it with mortar. In addition, many people insist that tastes better than the traditional way.

Peel the garlic, add chopped mortar along with the cumin and salt and let mashing until a more or less homogeneous paste. Then add the coriander and continue mashing.

We incorporate the vinegar and oil without stopping to give the mortar. We help a little water to give it the consistency you want (usually it is similar to pesto).
