Greek dolmades with chard leaves

The dolmades are some tasty rice rolls stuffed with a peculiar taste for its dressing. Traditionally made with grape leaves. If you do not know where to get vine leaves, we suggest this vegan recipe an alternative version with chard leaves.

Preparation: 35 min.

Ingredients for 6 serve

• 1 spring onion
• 1 cup rice (preferably round grain)
• 8 sheets of whole chard as possible
• 1 lemon
• 1/2 cup olive oil (and a bit more to fry)
• 1 clove garlic
• 1 teaspoon dill
• Salt

Preparation


Cut it fine chive and put you in a pot with a little oil and rice that you previously washed a few times to get the starch. Fry over a low heat few minutes and add 5 cups of warm water. We will cover and let boil.

Meanwhile, we prepare the dressing with which we will bathe the dolmades. For this shall squeeze the lemon juice and seeds withdraw. Itch very fine tooth add garlic and lemon as well as teaspoon dill, ½ cup of olive oil and a pinch of salt. Mix with a fork and leave aside.

Will wash the chard leaves carefully so we do not break. They cut off the stems and will stay only green part (stems, of course, you can then use them for soup or other dishes).


When the rice is almost the same point in the water we introduce the chard leaves and scald only for 5 minutes. Only in the event that the greens are not very fresh and are harder we will leave a little more, but keep in mind that the leaves should maintain firmness needed to roll them with rice inside without breaking.

Prepare a bowl of cold water to enter the chard leaves there as soon as we remove the cooking water and let them slip.

Leave the leaves in cold water while the water that snuck any remaining rice.

Now it is when the part is a little more complicated. Carefully extend a leaf of spinach in vertical to us.

Will rice near the bottom of the leaf (freeing about three fingers on the bottom) but centered with respect to the horizontal ends. We must vacate roughly two fingers on each side.

Then we start to roll rice covering the first side, then with the piece that we vacated at the bottom and finally rolling it slowly upward until we have closed the roll. Humidity of rice and leaf spinach will help us all stay united and well stuck.

Will place the roll on a platter or in a deep dish and continue with the same procedure until we have done all. As you could see the rice ration given to about 6 rolls (depending on the size of the leaves) but we scalding 8 sheets, it is to have any reservation for us if it breaks.

When all are ready dolmades and placed in the container in which we will bring to the table, the bathe with the dressing we have prepared and let stand at least 5 minutes to coat.
