Recipe vegan pumpkin fritters. A soft and delicious donuts with a few simple ingredients and preparation.

Ingredients for 20 donuts
• 500 g. Peeled and seeded pumpkin
• 200 g. Flour
• 16 g. Baking powder
• 1 tablespoon sugar
• 1 teaspoon salt
Preparation
Preheat oven to 180 degrees C.
Having previously peeled and seeded pumpkin put in the oven the chopped takes less time to roast. More or less, depending on the size of the pieces of pumpkin, it will take 45 min. to be ready.
Meanwhile a wide container puts 200 g. wheat flour (if we want we can put a half whole wheat flour), mix baking powder, a teaspoon of salt and a tablespoon of sugar.
After removing the pumpkin from the oven and let the beat cool slightly. Then mix together flour with pumpkin and stir well until it is homogeneous. It will be a sticky mass. Reserve covered with a cloth approximately one hour. For which it acts yeast.
Heat a pan with oil. When the oil is hot, with the help of a pastry bag (or a plastic bag with a corner cut) we leave squash dumplings that are fried.
When it has browned on one side, we turn, we end browning and put them on paper towels to remove excess oil.
