Tart grapes

American grapes cake type. Adapting from a vegan grape cake recipe.

Preparation: 50 min.

Ingredients for 5 people

• 2 cups flour
• 1,1/2 cup 100% vegetable margarine
• 1/2 teaspoon salt
• 1/2 teaspoon sugar (to the ground)
• 14 cups cold water
• 5 cups of grapes (purple, preferably)
• 1 cup sugar (for filling)
• 1 tablespoon lemon juice

Preparation


If the grapes have seeds will use, the first step is to cut one by one all the grapes in half to remove seeds. Obviously, we can skip this step if you have purchased seedless grapes. In either case leave the shell! If they take off, and change the taste of the cake, grapes would be too soft and would lose all their liquid.

Once we have prepared the grapes without seeds, we put them in a saucepan with the lemon juice and sugar. The amount of 1 cup sugar is indicative, if the grapes are very sweet you might prefer to take less sugar. We put it in the fire and when the mixture begins to boil, then leave on low heat for ten minutes (must be consumed almost all the liquid they release the grapes, so they can be left longer if necessary). Then remove from heat and let cool.


Meanwhile, we prepare dough with the other ingredients. To do this in a bowl, mix flour, salt and sugar. Then add the margarine and start working with your hands, finally add the cold water and continue working.

Divide the dough into two balls, one slightly larger we will use in the bottom of the cake. Extend the dough with a rolling pin and then place it carefully in the mold so that it does not break. Cover the edges well, we'll take the grapes and place them over the top of the cake.

Will join the top of the cake with the edges of the base either by winding two layers of dough or crushing them against the edge of the mold with a fork. Then we make three or four holes in the body of the cap clicking with a fork to allow steam to escape grapes when the cake is in the oven.

We will put in the oven at 170 for 35 minutes.

Although you can use any type of grape for this recipe, the traditional cake is with purple grapes. The final aspect is much more striking because it contrasts the color of the grapes with mass.

It would be convenient to use a shallow pan.
