Vegan Spanish Tortilla

Another new Spanish tortilla recipe potatoes vegan version. Posted by Mustard and Media, which offers us another way to cook the traditional omelette.

Difficulty: Easy

Ingredients for 1 person

• 1 small onion
• 1 medium potato
• 2 tablespoons chickpea flour
• 2 tablespoons wheat gluten
• Half teaspoon baking soda
• Water
• Olive oil
• Salt

Preparation

Grate the onion with a large hole grater.

The poached in a pan with olive oil and a little salt.

While the onion is done we will also grating potatoes.

We incorporate it with a little salt to the pan with the above and let it done, stirring occasionally, until the potatoes are soft and some area a little toast.

Meanwhile, we are preparing cream replacing the beaten egg.

In a large bowl or salad bowl filled not we take two tablespoons of chickpea flour and other wheat gluten.


The mix well and we add cold water (important to be cold so we would not become a sort of seitan) gradually, stirring, until thick liquid us something like beaten egg.

Add the bicarbonate and re-mix.

At this time already they have been fried potatoes with onion and oil to drain them and add to the bowl with the flour and water mixture.

Stir everything well, check the salt and let stand for 10 minutes at room temperature (not necessary, but this way we make sure that does not have the texture of flour in the mouth to eat it, because it will absorb moisture well before curdling) .

In a small nonstick skillet, heat a little oil (I used a little of it was left over from frying potatoes with onions to get the aroma and flavor that is so good).

Pour the mixture into the pan, over medium heat and let it curdle enough until we can turn the tables without breaking and is made by the two sides.

So to give a few laps for each leg side is uniformly good.

Gluten not change the appearance or taste, but is more consistent texture, like a well-cured egg.

And regarding the cutting of the potatoes and onions to fry, is optional, I like grating with a large grater because it is fast, convenient and cooked before, but if you like into squares, sliced, etc., you can be done without problems.

When you are done, we can serve, for example, fried peppers trim as seen in the photo, because married the two flavors and textures very well.
