Potato tortilla vegan (no eggs)

Vegan tortilla chips, recipe without egg. The preparation is identical to the traditional Spanish tortilla chips, but the egg is replaced by a mixture of water and chickpea flour.

Ingredients
• 3 or 4 medium potatoes
• 1 onion (optional)
• 5-8 tablespoons of chickpea flour
• 12 grated zucchini or tomatoes, cut into small pieces
• Frying oil
• Salt

Preparation

The process of omelette without egg is equal to the conventional tortilla beaten egg simply a mixture of chickpea flour and water must be replaced.

Slice the potatoes with onion and zucchini (if used) and fry in a pan with hot oil and salt to taste.

On the other hand, in a bowl, mix the chickpea flour with water until a texture a little thicker than the egg. Add a little salt to the mixture and whisk to avoid lumps.

When the potatoes are fried with vegetables, drain the oil and add the mixture of chickpea flour and water. Stir well.

Pour a little oil to the pan, distributing it on the surface and take the dough (not a very thick layer to heat to get inside the tortilla). Go gently shaking the pan so that the tortilla does not stick. Help yourself with a spoon so that the tortilla does not disassemble.

After a few minutes, give the return on a dish, to be cooked on the other side. It is better take several turns to let a long time without moving and burn, so it will be best done inside.

It should be left for a few minutes so that the tortilla does not undo while hot. Another interesting option is to add finely grated raw zucchini and mixing all the ingredients, rather than fry with potato.

To give you a juicy touch, you can take the dough, before passing by the pan, a small ripe tomato chopped fresh parsley and diced.

You may do it with another type of flour (wheat, rice, corn ...) but the best result is with chickpea flour.

A good idea is to accompany the tortilla with veganaise (vegetable mayonnaise) .
