Buckwheat with broccoli

A simple vegan recipe for buckwheat as a suggestion to prepare this pseudo cereal. This time he is accompanied by broccoli, leek and carrot, but like all drugs, is at your disposal to be modified.

Ingredients for 2 people

• 100 g. Buckwheat (corresponds to 12 cup = 125 ml.)
• 250 ml. Water (1 cup = 250 ml.)
• 250 g. Broccoli
• 1 clove garlic
• 1 medium leek
• 3 medium carrots
• 1 tablespoon olive oil
• Salt and pepper

Preparation

First, we prepare all the vegetables and reserve separately. Peel and chop the garlic. Cut the leeks into slices. Wash and cut the carrots into sticks. Broccoli florets separated with the help of a knife. We can also use the stem of broccoli, peeling and discarding the hardest part of the skin. The rest will cut into sticks as we have done with the carrot.

In a fry pan gravy boat type over high heat and when minced garlic begins to brown, add the leek. We went down to medium-high heat, give a few laps with wooden spoon and add the carrots. Stir occasionally while depressed for 2 minutes.

Add the florets and stems of broccoli. We fry another 3 minutes and then we'll see broccoli acquires a darker shade of green.


Now we add buckwheat and twice the volume of water than wheat. It is advisable to wash the buckwheat under the tap with the help of a strainer first.

Salt and pepper, cover half the pan and stir occasionally until the water evaporates. Our vegan recipe is ready in about 20 to 25 minutes. We can try the buckwheat to see if it is tender. If all the liquid has evaporated and wheat cooked has not finished, we can always add a little bit more water.

We serve accompanied by a beautiful salad and enjoy this ancient food.

The proportion to cook buckwheat, as you see in our recipe is 1 part buckwheat and 2 parts water (by volume).

The broccoli in this recipe will be partially steamed and slightly crude, allowing us to make better use of nutrients, and we also know richest well. We also like the carrot not totally cooked, so the sticks do not do very fine.

The buckwheat (also called black wheat) really is not even a cereal, despite what might be expected by name. As happens with quinoa or amaranth, which are called pseudo cereals. It is a highly valued food for its nutritional properties, of which we can emphasize its content in magnesium, B vitamins and high protein content. In addition, buckwheat contains no gluten, so this vegan recipe is suitable for coeliacs.
