Spinach and pear croquettes

Croquettes delicious recipe for spinach and pear. Make croquettes is always a bit more elaborate than other recipes, but the result is worth it. As Elena suggests can cook many at once and freeze a portion for other days.

Ingredients

• 400g of spinach (fresh or frozen)
• 300 ml of béchamel thickens
• 2 or 3 pears
• Pinions
• Breadcrumbs
• Chickpea flour
• Virgin olive oil
• Black pepper
• Salt

Preparation

Clean the spinach if fresh. Cook them in salted water until soft. Drain well and reserve.

Peel the pears and cook a few minutes. In the microwave, they are made very quickly.

Dora a handful of pine nuts in a pan with a few drops of oil. Add the crushed cooked pear with a fork, and spinach and fry a few minutes. Corrects salt and sprinkle some black pepper.

While preparing a béchamel , which in this case must cook to fire a while to thicken.


Joins the béchamel to spinach and mix well. Let cool, even in the refrigerator a few hours, and get ready to form the croquettes a large spoon, go catching portions which go first passing through a mixture of chickpea flour dissolved in water (up having beaten egg texture), and then in breadcrumbs. You can do more than necessary, and freeze them in bags, taking care not to freeze stuck together at first, because then it will be difficult to separate. When you need to eat them, you only have to fry them in hot oil directly.
