Stuffed Potato gratin

Vegan recipe for potatoes stuffed with mushrooms, tomatoes, onions and zucchini gratin baked with béchamel.

Ingredients

• Potatoes
• Onion
• Grated or crushed tomatoes
• Mushroom
• Zucchini
• Pepper
• Oil
• Salt
• Also, we need to make vegan béchamel

Preparation

We open the potatoes in half and emptied by foot boats with a border of about one centimeter.

Bake the potatoes until they are soft.

While the potatoes are baked advantage to make the filling and béchamel ( white sauce preparation vegan ).

For the stuffing chop into small cubes of potato hearts that we extracted to the boats, zucchini, mushrooms and onion.

Fire put two pans in a fry the diced potatoes and fry another zucchini, mushrooms and onion. A time is all fried vegetables, put them together in the same pan and add the grated or crushed tomatoes to fry. The sauce we add a pinch of pepper and salt to taste.

With this fried potatoes fill the boats that we have from the oven and spread out over the béchamel we have prepared.

We return to put the boats and stuffed baked potato to cook au gratin. Then remove from the oven and serve.

It is important to foil or paper towel under the potato boats in the tray to the oven and communicate to us to not sure if they will stick.

Another alternative option is the béchamel grated tofu or vegan cheese to melt.
