Baba Ganoush - Pate Eggplant

Recipe from Baba ganoush eggplant vegetable pate. A simple way to make vegetarian pate with eggplant. Surprisingly delicious. Worth a try.

• 1 large or 2 medium eggplant
• 1 onion
• 2 or 3 garlic cloves
• 2 tablespoons tahini (optional)
• 12 lemon juice
• 4 tablespoons olive oil
• 1 bunch parsley
• 1 tablespoon ground cumin
• Salt and pepper

Preparation


For this recipe can be cooked ingredients our baked eggplant pate or frying in the pan. In the first case the first thing we will do is preheat the oven.

Peel and cut the onion. Wash the eggplant and cut into pieces (the smaller to eat ingredients pâté be made before).

- In the pan if we are going to cook the ingredients in the pan, we heat the oil. Once hot, fry the onion and eggplant. Let stirring to prevent sticking to the bottom.

- In the oven, to cook in the oven, once it is hot (about 180 degrees is enough), we can eggplant and onion with a tablespoon of oil until all squishy stay.


When everything is well poached had a mixer bowl and beat everything together with the other ingredients garlic and parsley, lemon juice, cumin, salt and pepper.

We can serve spread with toasted bread or pita bread.

If we tahini (sesame paste) we can add a tablespoon and give this vegetable pate a special taste, but not essential.

If we have the very liquid pate we can correct thickness with breadcrumbs, giving it the consistency you want.
