Vegan pancake recipe, traditional Easter dessert.
Ingredients
• 1 loaf of bread a day or two before
• 750 milliliters of soy milk (approx.)
• 160 grams of sugar
• 1 piece of lemon peel
• 1 cinnamon stick
• Flour and sparkling water (or flour batter eggless)
• Oil for frying
• Cinnamon
Preparation
Heat the soy milk with sugar, lemon peel and cinnamon stick. When it starts to boil turn off the heat and let cool milk.
Cut the bread diagonally with about 2 centimeters thick.
For the batter mix flour and sparkling water (very cold) to get a slightly thicker consistency than the egg.
Heat the oil in a skillet with enough oil for frying.
Bathed slices of bread flavored soy milk, no leak and were spent by mixing batter and pan. Fry until they are golden brown on both sides, leaving later on paper towels to absorb excess oil.

Serve the toast once cool with a little sugar and a touch of cinnamon powder. Serve with a sweet wine.
There are other ways eggless batter. You can use special flour that sells prepared without egg batter; tempura flour; a mixture of chickpea flour, water and a little vinegar (to remove the pea flavor) are some other options.
