Milcaos (Chilean potato bread)

Milcaos vegan recipe. Also called melcao or even milcado is a traditional Chilean food that is prepared to accompany other dishes. There are many fried, steamed or baked variants, mixed with other ingredients. There is a specific variety of potatoes to prepare in Chile.

Ingredients

• 2 kg. Potatoes, peeled and cooked
• 2 kg of hash browns
• 18 kg vegetable shortening
• Salt


Preparation

Puree the cooked potatoes.

Grated potatoes are squeezed in a cloth to remove the potato flour or cornstarch. This pulp is kneaded with mashed potatoes, shortening and salt.

Roll with form 7 cm. in diameter and 1 cm. thick. Bake, fry or cook them steamed
