Curry Gobi - cauliflower curry

Gobi curry recipe is a vegan cauliflower Indian style. The intensity of the spices contrasts with the soft touch cauliflower and coconut milk. A simple, surefire exotic dish.

Ingredients for 2 people

• 400 g. Cauliflower
• 1 onion
• 2 teaspoon garam masala (mixture of spices from India)
• 1 teaspoon turmeric
• 1/2 teaspoon ground black pepper
• 1 teaspoon salt
• 2 tablespoons olive oil
• 200 ml coconut milk (Approx. 140 g. )
• 200 ml water

Preparation

Cut the cauliflower into small florets, wash them well under running water with the help of a strainer and reserve.

Chop the onion and reserve.

In a bowl we put the spices garam masala, turmeric and pepper with 2 tablespoons of water. Mix to obtain a smooth paste. (Beware! Spices are given in teaspoons dessert).

We heat to medium-high heat (69) 2 tablespoons olive oil in a skillet wide and high. When the oil is hot pour the spice mixture and stir for half a minute (we see that the oil is absorbed by the mixture). Add the chopped onions and let stirring every bit with the wooden spoon for about 5 minutes. Add the cauliflower florets. We let everything right mix for another 2 minutes, stirring gently.


Add 200 ml of coconut milk and 200 ml of water with a teaspoon of salt, cauliflower will almost cover. Stir and cover the pan, leaving a slot to breathe. We will cook for 20 minutes while we occasionally stirring carefully not to break the cauliflower. Then we cook another 10 minutes, but the cover of the water to evaporate.

Before serving, let we stand our curried cauliflower for 5 minutes.

We serve with basmati rice and garnish with cilantro or parsley.

Garam masala is a blend of spices widely used in Indian cuisine. It can be done at home by grinding cinnamon, cloves, nutmeg, black pepper and cardamom seeds (among other possibilities). However garam masala mix easily found in shops that sells products in Asia.
