Tumbet is a typical Mallorcan vegan dish that is itself a main course. This dish is eaten in Mallorca both hot and cold in the summer months.

Ingredients
• 1 large onion
• 1 large eggplant
• 2 green peppers
• 1 zucchini
• 4 potatoes
• Crushed Tomatoes
• Olive oil
• 1 bay leaf, salt and brown sugar
Preparation
In a pot, we fry garlic in olive oil, pour the crushed tomatoes and cook 2 bay leaves, salt and sugar to make a homemade tomato sauce.
(I sometimes add a carrot pieces in tomato to not add sugar, apart gives you more creaminess to the sauce)
While cooked tomatoes are sliced all the vegetables and wash.
In hot oil, fry the sliced potatoes, drain, sprinkle with salt and place in a serving bowl I can go in the oven, Mallorca is put into a pot of low, wide mud, greixonera.
We continue frying vegetables, this time the onion into slices and put on the potatoes.
We continue with zucchini, fry, add salt and bring to the onion.
Continue with eggplant, fry, add salt and put over the zucchini.
Finally fry the green peppers into pieces, add salt and put over other vegetables.
When all the vegetables are, cover with tomato sauce, squeeze with a spatula all the vegetables to the sauce and has absolving aspect of cake.
Put everything in a medium oven 15 minutes for the flavors to mix and then leave to stand before serving to increase the flavor.
