Vegan recipe for caramelized mushrooms with a touch of soy sauce.
Ingredients
• 12 kilo of mushrooms
• 12 cup chopped parsley
• 2 cloves garlic
• 14 cup soy sauce
• 12 cup water
• 3 tablespoons sugar
• 1 tablespoon poppy seeds
Preparation
Will wash the mushrooms well and cut the stems into pieces, but leave whole heads. We itch very finite garlic and put it together with the mushrooms in a pan with a little oil. No need to use a lot of oil because the mushrooms begins to release soon and that will be enough liquid to cook.
We will be removing careful not to break the heads of the mushrooms and when one minute has passed, add the chopped parsley and a tablespoon of poppy seeds, commonly found in any herbalist. Alternatively tablespoon sesame seeds can be used.
We'll let go roasting mushrooms over medium heat and meanwhile prepare the liquid to caramelize. In a bowl will water and sugar and mix well until the sugar has dissolved, then add soy sauce.
When the mushrooms are browned, add the liquid and keep over medium heat stirring constantly so the sugar does not stick to the pan. You have to give her time to this process, the liquid should be halved, which will take about ten minutes.
