Couscous with vegetables

Recipe for couscous with vegetables, very easy to prepare and with many possible variations according to taste. The couscous can be a good starter, to accompany a dish with a rich sauce or curry.

Difficulty: Easy

Serves: 4

• 12 cauliflower
• 2 carrots
• 1 onion
• 12 broccoli
• 2 artichokes
• 3 mushrooms
• 2 cups of couscous
• 2 glasses of water and means
• Cumin
• Pine nuts (optional)

Preparation

Carrots, cut into small dice and thin, onion, cauliflower, broccoli, artichokes and mushrooms, taking care to go first throwing vegetables that take longer it takes.

Sauté everything and add the cumin, pine nuts and salt.


In a saucepan aside will boil 2 ½ cups of water. When the water is boiling, add the Couscous in the pot with the vegetables and mix so that the semolina lightly browned. Then we add the boiling water to the other ingredients and put out the fire.

The Couscous was just done with heat and water.

Let rest a little and add salt and season to taste with cumin.
