Vegan recipe for risotto with mushrooms. The risotto is a typical way of preparing rice in Italy. We offer a version with mushrooms and a touch of white wine.

Ingredients for 2 people
• 250 g. mushroom
• 12 cup white wine (or hot water)
• 1 medium onion
• Olive oil
• Hot vegetable broth or water 3 bowls approx.
• Bomba rice or other (but not long grain), 1 bowl.
• Saffron, salt and pepper
Preparation
Cover the bottom of the pan with the oil and sauté the chopped onion.
Add the mushrooms, sauté, and season and add the wine.
Once the alcohol evaporated, add the rice wine and mix with a wooden spoon.
When the rice is steeped in the other ingredients, making wooden spoon with a free slot of fluid in the middle to take the saffron and let it roast.
Once toasted saffron mix well.
Slowly adding the broth (or water) and stir gently. Keep the broth (or water) always on fire and go adding it to the rice as you need it, always stirring with wooden spoon.
When we consider the rice is al dente quench and cover for a few minutes. We serve hot.
