[Recipes]:Vichyssoise - cold cream of leek

The vichyssoise soup is a cold cream of leek. Their preparation is easy. In this recipe we suggested using soy milk as an alternative to cream. But we can use another type of milk or vegetable cream.

Serves: 4

• 4 leeks
• 2 potatoes
• 1 onion
• 1 cup vegetable milk (soy, for example)
• 1 tablespoon vegetable margarine (vegetable oil or soft)
• Salt and pepper

Preparation

Chop the onion and chop. Peel, wash and cut the potatoes into cubes. Let also trimmed and cut leeks (white part only will use).

We put the margarine (or oil) in a pot over medium heat and onion, fry few minutes to take a clear tone.

Then add the cubed potatoes and leeks, fry along with the onion for about 4 minutes, stirring with wooden spoon.


We put water in the pot to cover. We let it all cook together for about 15 minutes.

To Seasoning, then add a cup of soy milk (or other vegetable milk) and grind everything with the help of the mixer.

At this point we can spend our cream vichyssoise by a Chinese, to make it a more homogeneous and smooth texture.

Let cool completely in the refrigerator before serving.
