Ingredients
• Pumpkin
• 1 potato
• Water
• Vegetable broth 12
• Olive oil
• Salt
• Ground black pepper
• Roasted pumpkin seeds
Preparation
Peel and chop a piece of pumpkin and potato.
Prepare a pot and add water, but no cover at all. Add a pinch of spices, salt, vegetable broth and oil splash. Bring to simmer a few minutes until everything is tender.
Go through the mixer, until a smooth cream. To make it creamier, you can add a splash of vegetable milk or a piece of tofu.
Corrects salt and add some roasted pumpkin seeds for garnish.
You can serve it cold or hot, depending on taste.
