Vegetable soup recipe. A vegetarian soup ideal for making those vegetables you have on hand and start to get a bean, not throwing. Thus also, every time we have a different dish.
Ingredients
Any vegetables you have at home garlic, onions, carrots, peas, green pepper, red pepper, broccoli, leek, celery, turnip, tomato, potato, zucchini ...
Spices, all we like chopped parsley, chives, bay leaves, paprika, ground pepper, nutmeg.
Water
Oil and salt
Preparation
Peel and cut the vegetables into pieces that we have at home and want to add to the soup.
Sauté in the pan with a little oil and salt. Give them a few turns with a wooden spoon to prevent sticking to the bottom.
Away from heat, add some paprika and stir a little to distribute it well. Careful not to burn, or embitter the taste of all the food.
Add the remaining spices and cover everything with water. Simmer, or put the pressure cooker until the vegetables are tender and the broth to our liking.
If the soup is too watery, we can take a few tablespoons of vegetables, we went through the blender and add to soup.
Correct salt and serve piping hot.
Accompany this soup is delicious with a fried croutons or toast.
