Cold cucumber soup

A recipe for cold cucumber soup. Cucumbers combine with fresh dill, onion and garlic to create a smooth, creamy cold soup. It's an easy vegan and very refreshing recipe.

Serves: 4

• 2 teaspoons oil
• 5 chopped cucumbers
• 3 cloves garlic
• 2 diced onions
• 2 cups of vegetable stock
• 14 cup chopped fresh dill
• Black pepper to taste
• 1 cup soy milk


Preparation

In a large saucepan, heat the oil over medium heat and fry cucumbers, garlic and onion until onion is transparent (about 6 minutes).

Then add the vegetable broth and cook over low heat until smooth cucumber (15 to 20 minutes).


We removed the soup from the heat and turn to a blender or a blender container. Beat until smooth. Before the soup to cool, add the dill and season with pepper to taste.

Then we chilled cucumber soup before serving and add 1 cup of soy milk.
