It is recommended that we take whole grains, so we shared this example of how making a vegan recipe with brown rice. In this case accompanied with a sauce with carrots and pumpkin orange will give the final dish. So we just called this recipe orange rice.
Difficulty: Easy
Preparation: 45 min.
Serves: 4
• 280 g. Brown rice 1 cup (250 ml.)
• 3 cloves garlic
• 1 onion
• 3 medium carrots
• 450 g. Pumpkin (heavy skinless)
• 2 tablespoons olive oil
• Salt and pepper
Preparation
First heat it over high heat 2 cups of water (about 625 ml approx.) In the pan where rice cooked. When the water reaches the boiling point, add a teaspoon of salt and brown rice, which have previously washed with the help of a strainer. We went down to medium heat. The rice will be ready in a time of between 20 and 25 minutes, when the water has evaporated. Should not stir the rice and the end of cooking time we will watch to remove and prevent burning.
While the rice is cooking, we prepare the sauce ingredients. Peel the garlic, cut the onion into thin strips and make 1cm cubes side with carrots and squash.
In a sufficiently large skillet heat to medium-high heat 2 tablespoons oil. We gild the whole garlic cloves and then add the onion into strips. We will give a few laps with a wooden spoon and when it begins to be transparent onion, add the diced carrot and continue stirring occasionally.
After about four minutes also we add the diced pumpkin and seasoned. We watch, with the help of a wooden spoon, we do not burn. It will be ready when the pumpkin is cooked well, it will take about 15-20 minutes to be ready.
Finally, mix in same skillet, brown rice which by then will have finished cooking. We give a few laps to mix well and correct the salt if necessary.
Comments Recipe
We suggest to accompany the rice with a nice salad.
Brown rice takes 20 to 25 minutes to get ready, but it is much more beneficial for our food than white rice. We recommend that our consumption of whole grain cereals is to take advantage of all the nutrients naturally.
