Mushrooms stuffed with sweet potatoes

Easy and delicious recipe for stuffed mushrooms, baked sweet potato. A vegan recipe that supports several variations, so it can inspire many other dishes.

Ingredients for 2 people

• 6 large mushrooms
• 1 medium sweet potato
• 3 cloves garlic
• 1 small onion
• Salt, olive oil, rosemary (or other spices, to taste)

Preparation

Bring water to a boil. Meanwhile, thoroughly wash the mushrooms and remove the tail, so it is a gap.

Put the mushrooms in water when boiling, leaving only about 5 minutes. Remove and drain.

Cut into very small pieces garlic, onion, sweet potato and mushroom small tail.


In a skillet, heat some oil and add the garlic and onion. When they begin to brown, add the sweet potato and mushroom small tail. Add salt and rosemary to taste. Sauté, stirring occasionally, until tender.

Heat oven to 200 degrees.

With a teaspoon, fill the gaps of the mushrooms with vegetables. Put them in the oven for about 10 minutes, so a little brown.

Serve hot.
