A rich rice with tomato in Mexico is a common companion of many dishes. It is easy to prepare and very rich.

• 2 cups rice
• 4 cups water
• 3 medium tomatoes
• 12 onions
• 1 clove garlic
• 1 cup peas
• 2 tablespoons oil
• 2 tablespoons salt
Preparation
Chop tomatoes with half onion, garlic clove and 4 cups of water. We beat everything together and reserve.
In a skillet, heat 2 tablespoons oil and add the two cups of rice. Stir with a wooden spoon for a few minutes to brown the rice in oil.
When the rice is browned, add the whipped mixture of tomato, onion, garlic and water that we have prepared earlier. Stir and add 2 tablespoons salt and cup of peas.
When giving a boil and give a lap down heat slightly. We can cover it to make steam rice evenly. Before the water is consumed it is advisable to adjust the salt.
Check it with a spoon, making a little hole, if there is water in the background. When we see that there is no longer liquid and the rice is done, we turn off the heat and ready to serve.
