Cold garlic and almond soup

Cold cream of almonds, garlic and bread. It is a traditional recipe vegan Andalusian and Extremadura. It is a first appetizing dish whose ingredients does not detract humble the final result. We can accompany this recipe with grapes and slices of melon.

Serves: 4

• A piece of bread crumbs (250 g. Approx.)
• 100 g of raw almonds and peeled
• 2 cloves garlic
• Half a liter of cold water
• 1 cup olive oil
• 1 jet wine vinegar
• Salt


Preparation

In the bowl of the mixer, we put together the garlic, almonds and a little salt. We crush all well with mixer, helping a little water if necessary. Then add the bread crumbs that have been soaked in water. We will beat to a paste.

Then we add the oil slowly, as if we were to do Veganism also vinegar and water, always beating gently.


We'll have all the Chinese to finally let it cool in the refrigerator.

We serve chilled in a bowl.
