Chop suey is a Chinese dish of sautéed vegetables and dragon's teeth (also called bean sprouts), accompanied by soy sauce. This vegan recipe is easy and appetizing.

Serves 4
• 1 zucchini
• 2 eggplants
• 1 whole cauliflower
• 2 carrots
• 1 broccoli
• 1 green pepper
• 1 scallion
• Dragon teeth (soy beans)
• 17 almonds
• 1 serving of mushrooms
• Soy sauce (to taste)
• Oil
• Salt
• 250 g. Pasta (noodles)
Preparation
Wash all vegetables well.
Cut into slices or squares the zucchini and eggplants.
Cut into rectangles both carrots and green pepper.
Prepare small pieces broccoli and cauliflower
Four from each mushroom.
Sauté with oil and salt all the vegetables we have prepared dragon's teeth, all in the same pot for about 4 minutes; add a pinch of salt and add the almonds to finish skip it all together 2 minutes more. (Total time about 6 minutes in the pan or wok)
Boil plenty of water with a little salt. When giving a boil dip the noodles.
When you're ready passes (depending on the type of noodles) serve vegetables individually on the plate and add soy sauce to taste

Chop Suey or chapsuí is a dish whose origin seems to be Chinese-American. Referring to the story of the supposed invention recipe by an overwhelmed cook, which decided to serve a dish with ingredients chopped and sautéed in its possession is made, lack of a better name mixed pieces, which is like we would translate literally chop suey.
