Tofu dumplings apricot sauce, a delicious vegan recipe, courtesy of our partner Elena.

Ingredients
For meatballs
• 250 g. Block of fresh tofu
• 2 medium carrots
• 1 onion
• 2 tablespoons toasted sesame seeds
• 1 or 2 tablespoons soy sauce
• Freshly ground black pepper
• Nutmeg
• Salt
• Oil
• Whole meal flour
For the sauce
• 150 g. dried apricots
• 1 or 2 carrots cooked
• 1 baked potato
• Oat milk or other vegetable milk (by eye)
• Salt
• water (to cover the apricots as a finger over)
Preparation
Meatballs
Remove the tofu from the package and wrap it with a cloth. Leave it for about 12 hour at room temperature, to release all the possible serum.
While sauté the finely chopped onion. Boil some peeled carrots. After cooking the latter, well small the itch. Add to onion chopped carrot, shredded tofu with your hands, sesame, soy sauce and spices.
Mix well to make it all perfectly distributed. Always under fire, only to evaporate some water may have.
Formed meatballs the size we like and floured before frying in the pan with hot oil. So that the dust with flour do not break, you can take the little flour in a bowl and put the meatball inside the bowl gently stir in circles and meatball wrapped in flour alone.
To remove excess oil, put on a plate with paper towels.
Salsa
Cut the dried apricots into small pieces and let them soak in water a few hours before to hydrate well.
Peeled and cooked carrots were spent in a blender with dried apricots and the rest of the ingredients.
The water on the hydrated apricots we can correct the thickness of the sauce and make m's light if our liking.

The presentation is simple
A baking tray with the gravy in the background, spread over the meatloaf, and a few slices of cooked carrots and chopped parsley to give notes of color.
Serve piping hot.
