We suggest eating chickpeas in a different way, a vegan chickpea salad recipe. It's a good way to eat vegetables in hot weather. It is a great starter, almost as a single dish.
Ingredients
• 400 g. Cooked chickpeas
• 1 tomato
• 1 cucumber
• 1 carrot
• 3 leaves of lettuce
• A little onion (to taste)
• 10 pickles
• Oil, vinegar and salt
Preparation
It is preferable to cook the beans at home, but a can of precooked chickpeas is a good solution if there is not much time. In that case, we wash well the beans in a colander under running water to remove any preservatives. We drain well and place them in a deep dish.
Peel the cucumber and wash with tomato, carrot. Cut ingredients roughly the size of chickpeas. Thus we get a colorful plate. Also add some pickles, to give a touch of acidity.
Will wash a piece of onion to taste and finely chop. Mix well with cooked chickpeas and lettuce leaves that we have previously prepared.
Season with salt and pepper and alin with olive oil and vinegar or our favorite vinaigrette.

The amounts in this recipe are designed for a 3 people. We can serve with rice or a light meal.
If there is to be consumed at the time, it is preferable not add lettuce and keep the salad in the refrigerator.
