Millet croquettes recipe with tofu. Croquettes that do not require preparing béchamel, so working out is much simpler than traditional croquettes.
Ingredients
• 100 grams of millet
• 250 g water
• A small onion
• 100 grams of crumbled tofu (or any other ingredient which wants to fill croquettes, mushrooms, seitan, leek, etc.)
• Breadcrumbs at the discretion
• Half cup of soy milk
• Oil for frying
• Salt, white pepper and nutmeg
Preparation
Cook the millet in water for 15 or 20 minutes, and simmer covered. You will have to be very cooked, if necessary, add more water.
Cool completely, must be completely cold so that it can handle and ingredients link well.
Sauté finely chopped onion with tofu in a pan with two tablespoons of oil.
Add to the mass of cold millet, along with spices, soy milk and salt and knead by hand, adding breadcrumbs until we have an easily moldable mass.
Form the croquettes, passes through breadcrumbs and fry in oil.
Serve hot with salad, ketchup, etc.
