Cooked soybeans

Recipe for white or yellow soybeans on a perfect warm stew for the cold months.

Ingredients

• 200 g. Grain white or yellow soybeans
• 1 onion
• 1 clove garlic
• 1 potato
• 2 carrots
• 1 ripe tomato
• Olive oil and salt

Preparation

Put soaked soybeans for 1 day.

Peel and chop all the vegetables and make a sauce with some olive oil. When everything is golden, remove from heat and add a teaspoon of paprika. Stir with a wooden spoon and add the drained soy.

Add water to cover and simmer until the soy is tender. It takes a while to cook, so it's good if you can use a pressure cooker, because it saves a lot of time.


If in the middle of cooking, you need to add water to the stew that is warm or hot water, so that the grain does not harden.

Ideal for cold winter day’s dish. The preparation is similar to any stew, but using the white or yellow kernels soybean.

It is a very nutritious dish, high protein. The milky grain texture gives a pleasant taste.
