Lentils with apple and peppermint

Lentils recipe with apple and mint, a completely different way of eating lentils. It is a slightly spicy and sugary vegetarian recipe that is sure to surprise you.

Ingredients

• 1 large onion
• 2 blocks
• 2 tablespoons sugar (preferably brown)
• 2 tablespoons apple cider vinegar
• 1 cup lentils
• ½ cup corn
• 1 teaspoon salt
• 1 teaspoon ground nutmeg
• 1 teaspoon curry
• 1 pinch of paprika
• Olive oil to fry
• 1 liter of boiling water
• To taste chopped fresh mint for garnish

Preparation

Will cut the onion into fine pieces roughly and will to soften with a little olive oil over medium heat.

Meanwhile wash our apples, we will remove their skin and the heart and cut it into cubes.

When the onion is squishy add a spoonful of sugar and vinegar and also will miss the apple. We wait a few minutes, stirring occasionally until everything is poached a little bit (of 7-10 min).

Add the lentils. If we want the dish is ready it is a good idea to leave before the lentils to soak overnight.


Once the lentils are in the pot with apple and onion add the spices (nutmeg, curry, salt and pinch of pepper). We will remove a bit and wait a minute before adding a liter of boiling water.

Once we have thrown water we will cover the pot and let simmer about 40 minutes or until lentils are well done.

Finally, we will draw about one cup of lentils with a little broth to grind power. The will grind with a mixer until completely dissolved and add the puree to the pot to add substance to the soup.

Finally just have to put the chopped mint over each serving dish.

Depending on the type of apple you choose the recipe will be more sweetish or slightly acid touch.

Any variety of lentil be fine except red, because the result would perhaps too sweet.
