We suggest this vegan recipe for coleslaw (coleslaw). We have simplified the recipe for my easy to prepare. Variants we are infinite, adding or modifying ingredients. Usually this type of recipes takes veganaise, but we preferred to do without that ingredient to make preparation easier.

Ingredients for 5 people
• 450 g. Cabbage (cabbage)
• 200 g. Carrot
• 150 g. Apple
• 80 g. Onion
• 60 g. Olive oil
• 30 g. apple cider vinegar
• 10 g. strong mustard (Dijon for example)
• Salt and pepper
• Poppy seeds (optional)
Preparation
The preparation of this coleslaw is very simple. Basically it consists of finely grate the ingredients, prepare the dressing and mix.
Roll cabbage, carrot, apple and onion (we use a mild onion, purple or similar flavor). If using a food processor can chop everything together. Grate everything by hand is a bit more laborious but just as effective. It is not necessary that we use the smallest measure to chop ingredients. Once everything grated mix everything together, season and reserve.
Meanwhile, prepare the dressing, mixing and whisking with a fork oil, mustard and vinegar. We have used strong mustard, but if we have soft, just add a little more quantity.
Finally, we mix well dressing with chopped ingredients, garnish with poppy seeds and serve.

This cabbage salad can be served at room temperature, but preferably let stand a few minutes in the refrigerator before serving.
Variants of this salad are innumerable, we have decided not to prepare with veganaise to simplify the process, and however it is very common to add more cream to this coleslaw with a little vegetable mayonnaise.
