Recipe for stuffed peppers with potatoes and mushrooms. A rich funny vegan recipe to prepare. From this basic idea you can make changes to other vegan dishes with stuffed peppers.
Ingredients
• 2 red peppers (peppers will choose to be rather squares so they can be standing easily)
• 6 mushrooms
• 2 cloves garlic
• 2 cups mashed potatoes
• Some 100% vegetable margarine
• Olive oil
• Salt
• Pepper
• Optional a little tomato sauce
Preparation
Will wash the peppers and cut them in a circle around the stem carefully. We will take the seeds and white stripes is inside, everything carefully so that the peppers can remain whole and then fill it well.
We will put the peppers in boiling water with a pinch of salt. The water should cover completely. They should boil about 15 minutes, should be tender but not too soft and we must be able to fill them without breaking them.
Besides, we ready mashed potatoes. We can do it the traditional way by boiling or mashing potatoes and then we can use mashed flakes without milk (for which we used for this recipe) following the instructions on the box. Add salt to taste the puree, a teaspoon of margarine to make it creamier, if you will, a little bit of pepper.
We itch very fine garlic and put it in a pan with a little oil. Also cut off mushrooms and add the garlic. All you have to fry until golden brown. When ready, add the garlic and mushrooms to the puree and mix.
When the peppers are boiled they will remove the water and spend a little cold water to handle them with your hands. It will fill with a small spoon pressing a little from time to time so there are no air gaps.
If you want, you can wash the peppers with tomato sauce. You can also garnish with some sesame seeds or fresh parsley.

The recipe is designed for two people.
Note no need to peel the peppers, to leave the shell will be consuming more fiber. However, if desired, you can be peeled when they are boiled, as this will be easier.
