Crunchy vegetables, crisp noodles, creamy coconut milk and served with curry paste. Asian cuisine, as it should be: uncomplicated and incredibly good!
Ingredients for 6 servings
• 1 yellow pepper, (approx. 250 g)
• 1 red bell pepper, (approx. 250 g)
• 150 g shiitake mushrooms
• 100g snow peas
• 120 g bunched carrots
• 180g onions
• 1 bunch coriander
• 1 organic lime
• 400ml coconut milk (unsweetened)
• 1 tsp sesame oil
• 2 tsp red curry paste
• 300 g Spelt pasta
• Salt, Pepper
• 8 tablespoons oil
Time: 50 min plus cooking time 20 minutes
Preparation
1. Clean peppers into quarters, remove seeds and cut into fine strips. Clean mushrooms, remove the stems. Quarters or halved heads. Slitting mange touts into thin strips. Clean, peel and cut diagonally into thin slices carrots. Cut the onions into thin strips. Pluck coriander leaves and finely chop. Lime zest rub finely, squeeze juice.
2. Coconut milk with sesame oil, curry paste and half cilantro stir, boil down to half, Puree with a cutting bar. Season with lime peel and 1 tablespoon lime juice.
3. Cook pasta according to package directions in plenty of salted water until al dente, pour into a colander and leave to drain, taking care to collect 150 ml cooking water. Pasta with 1 tablespoon oil mix, so they do not stick together. Pasta water with coconut sauce, stir and boil creamy.
4. Heat oil in a wok or skillet strong, pour into a bowl, always admit during the following frying some of the heated oil. Half of onions and carrots in the wok give, sear strong 1 minute. Half of bell pepper and snow peas admit fry 1-2 minutes. Half of mushrooms admit, 1 Minute fry, season with salt and pepper. Half of the pasta, some lime juice and a little coriander while stirring. Give wok vegetables in deep bowls, top with a little sauce and serve. Repeat with the remaining vegetables, noodles, coriander and lime juice as well and serve hot.

The rustic wheat-relatives is increasingly cultivated in Franconia and Swabia, Spelled soup is part of the regional cuisine. Spelt is robust, hardly needs to be treated with pesticides and poly nuclear tastes as wheat. Attention vegetarians: Most contain curry pastes crab meat! Vegetarian curry paste can be ordered on the Internet.
