Between roasted peppers with goat cheese, olives and pistachios combine. Toll said: Mango Cucumber Häckerle with Harissa.
Ingredients For 4 servings
• 3 peppers, (each red, yellow and orange)
• 2 shallots
• 1-1/2 tablespoons olive oil
• 50 g black olives (without stone; drained)
• 60 g roasted salted pine nuts (50g peeled)
• 150 g goat's cheese
• 150 g low-fat cottage cheese
• 2 eggs
• 1 teaspoon cornstarch Salt and pepper
• 1 bio mini cucumber, (100 g)
• 1/2 mango, (200 g)
• 2 stalks Peppermint
• 1/2 bunch chives
• 6 tbsp. orange juice (freshly squeezed)
• 2 tsp harissa (North African spice paste)
Time: 40 min plus baking time 30 minutes
Preparation
1. Clean peppers into quarters, remove the seeds and place with skin side up on a baking sheet. On the top bar under the preheated oven, grill roast for 10-12 minutes, until the skin raises black bubbles. Remove peppers, cover with a damp cloth, let steam stripping and skinning.
2. Shallots into quarters and finely chop. Heat 1 tablespoon oil in a pan, sauté shallots over medium heat soft. Let cool down. Coarsely chop olives. Coarsely chop the pistachios.
Drain in a colander 3. Goat Cheese. Cheese, cottage cheese, eggs and starch until smooth in a bowl. Shallots, olives and pistachios fold and season with salt and pepper.
4. Spring form pan (18 cm diameter) with fat and place the half of the pepper to the ground. Cheese mixture of paint. Cut the remaining peppers into 1 cm thick strips and place on the ground. Bake in preheated oven on the 2nd shelf from the bottom at 180 degrees (gas 2-3, convection oven 160 degrees) bake for 30 minutes. Allow to cool on a grid lukewarm cheesecake in the shape.
5. Wash cucumber, peeled and cut in half lengthwise streaky, remove the seeds with a teaspoon. Halve halves lengthwise and cut into 5mm thick pieces. Mango peel, cut the flesh into slices of stone. Slices in 3 cm long pins and add to the cucumbers. Pluck mint leaves from the stalks and chop coarsely. Cut chives into small rings. Mix cucumber, mango, mint, chives and orange juice and season with salt, pepper and harissa. Cheesecake is cut into pieces and serve with the cucumber and mango Häckerle.
